Day 361 – Baked Eggs in Avocados

I have to give my husband most of the credit for this one. As soon as I saw this pin, I knew he would love it. When it comes to breakfast though, he’s the chef. He whipped these up this morning. Again, I’m keeping it real with presentation. Ours didn’t turn out nearly as pretty as the ones in the pin. Are you surprised? I didn’t think so.

Ingredients:

one avocado
two eggs
salt and pepper to taste

Directions:

1. Cut an avocado in half and remove the pit. Slice the avocado in 1/2-inch thick slices and use a round cookie cutter or knife to cut an even circle in the center.

2. Rub a skillet with a light coating of oil and place the avocado slices on top. Crack an egg in the center of each avocado. Turn the skillet up to medium heat and place a lid over the skillet and allow it to cook for two to three minutes.

3. Remove with a spatula, sprinkle with salt and pepper and serve.

The hardest part about making these was figuring out when they were done cooking. We’ve never cooked eggs like this, so the tops looked raw for quite a while. They definitely took a lot longer than two or three minutes to cook, so be sure to keep an eye on yours. The good news is that my husband loved these. I think he’ll be incorporating avocado into his eggs more often, but I’m not sure we’ll go with the same cooking method.
