Day 352 – Chocolate Chip Oatmeal Pancakes


My husband is out of town, so the little man and I were on our own for dinner tonight. That usually means breakfast for dinner. I’m pretty sure I could have breakfast for dinner every night. Actually, I pretty much do. When I’m pregnant, second dinner is always a bowl of cereal before bed. Breakfast is easily the best meal of the day in my book. We decided to try these Chocolate Chip Oatmeal Pancakes tonight. The little man was intrigued as soon as he heard the word chocolate.


  • 1 very ripe medium banana
  • 1 teaspoon baking powder
  • 1 flax egg (1 Tbsp flaxseed meal + 2.5 Tbsp water) I just used an egg
  • pinch salt
  • ½ teaspoon vanilla extract
  • 1 Tablespoon almond butter
  • 1 Tablespoon canola oil (or coconut oil)
  • 3 Tablespoons almond milk (or sub other milk – I used skim)
  • ½ cup rolled oats (or gluten free oats)
  • ¼ cup whole wheat or unbleached flour (or other flour)
  • 3 Tablespoons semisweet chocolate chips


  1. Preheat a skillet to medium heat or about 300-325 degrees.
  2. Prepare flax egg by mixing flaxseed meal and water and letting set for 3-5 minutes. While I didn’t use this method, I have heard great things about it from my sister. Apparently, it makes a great egg substitute!
  3. Mash your very ripe banana with baking powder.
  4. Add flax egg, oil, salt, vanilla, almond butter, milk and stir.
  5. Stir in oats and flour until just combined.
  6. Sprinkle in chocolate chips and fold gently.
  7. Scoop scant ¼ cup measurements onto lightly greased griddle. This should make 5 or 6 small pancakes.
  8. Cook for 2-4 minutes on each side – until golden brown.
  9. Serve plain or with a small drizzle of maple syrup and a few additional chocolate chips for melting.

These were amazing! I didn’t even need any maple syrup on these babies. The oatmeal makes them so filling too. I can’t wait to make these again. I know my husband will want to try them, so I’ll be making them with almond flour and dark chocolate chips for him. I would definitely make these if I were you!
