Pinterest does not have a shortage of mug cake recipes. Who knew there could be so many? I think this is the fifth one that I’ve tried. The concept is just so perfect. Why make a whole tray of brownies when you can satisfy your sweet tooth with one serving of cake in a mug? I’m all about salted caramel, so I was pretty pumped to try this one.
4 tablespoons all purpose flour
4 tablespoons sugar
3 tablespoons unsweetened cocoa powder
1/4 teaspoon baking powder
1/4 teaspoon salt
1 egg – beaten
3 tablespoons skim milk
1 tablespoon vegetable oil
2 salted caramels
1. Into a small bowl add: flour, sugar, cocoa, baking powder, salt, egg, milk, and vegetable oil. Mix to combine.
2. Pour mixture into a coffee mug. I used one that was on the larger side and I thought it was going to overflow in the microwave. It didn’t, but it came close! Drop caramels into center of mixture one at a time.
3. Microwave on high for one minute and 30 seconds. If needed (if cake batter is still gooey), microwave on high for up to an additional 30 seconds.
The concept behind this recipe is a good one, but I always run into the same problem when I have to “drop” things into the batter. They always sink to the bottom! I had a huge pocket of caramel at the bottom of the mug. It was delicious when I reached it, but I would have enjoyed some at the top too.
