I’m back with more pumpkin recipes! I don’t know about you, but I love a pumpkin latte. Starbucks makes a mean pumpkin latte, but I can’t afford to go there all the time. I was excited to give this recipe a try. It was originally written to serve 8, but I modified it to serve 2 instead.
2 tbs of pumpkin puree
2 tbs of vanilla
1/2 tsp of cinnamon
1 cup of strongly brewed coffee
1 1/2 cups of milk
2 tsp of sugar
2 cinnamon sticks
whipping cream (optional topping)
Combine the milk and coffee, and pour into the Crock Pot. Whip together the other ingredients (minus the cinnamon sticks and whipping cream) and pour into the Crock Pot. Mix well. Cover the Crock Pot, and cook on high for 2 hours. Serve with a cinnamon stick and whipping cream if desired.
I thought this was really good. It doesn’t beat Starbucks, but it will do. I don’t think I brewed my coffee quite strong enough though, so make sure you really brew a strong cup. I think I might add more pumpkin next time too. Maybe I’ll even throw in some pumpkin pie spice. You can’t go wrong there!
