Day 185 – Salmon with Garlic, Lemon and Dill


If you enjoy salmon, I have a winning recipe for you. I have just recently fallen in love with dill. I’ve always loved dill pickles, but I never used the spice in any cooking. That all changed when I discovered Dill Triscuits. If you haven’t had these yet, it’s probably better that way. Save yourself. It’s too late for me.


1 lb salmon fillet
2 tsp butter
1 tsp olive oil
1 clove of garlic, minced
Sea salt and freshly cracked pepper, to taste
Fresh dill, to taste
Lemon slices


1. Preheat the oven to 450 degrees. Line a baking sheet with tin foil then coat it with cooking spray.

2. Combine the butter, olive oil, and garlic together then spread evenly over the top of the fish. Season with sea salt and freshly cracked pepper, to taste. Sprinkle freshly chopped dill all over followed by a layer of lemon slices. Place skin side down on the prepared baking sheet.

3. Bake for 10 minutes or until the salmon flakes easily with a fork. Remove from the oven and serve with additional slices of lemon if desired. Serve immediately.

The only problem I ran into with this recipe was that the fish didn’t cook through where the lemons were. I pulled it out of the oven thinking it was done, but when I pulled the lemons off, the fish was still bright pink. I put it back in the oven for a few minutes without the lemons on top and that did the trick. Once it was ready though, it was delicious!
