For those of you that remember my Cilantro Lime Rice post, you know about my love of cilantro. I’m not sure what I love more; basil or cilantro. It’s a tough call. That’s said, I couldn’t wait to try this recipe for Cilantro Thai Grilled Chicken.
2 garlic cloves, coarsely chopped
1/2 cup cilantro
2 tablespoons asian fish sauce or 1 tablespoon of soy sauce (I used soy sauce)
1 tablespoon toasted sesame oil
4 boneless skinless chicken breasts
1. Place all the ingredients except chicken in a food processor and process until smooth. I actually just chopped mine really fine and it worked well.
2. Pour marinade over chicken breast and let flavors sink in for 15 minutes in the refrigerator. (I put mine in for about 3 hours.)
3. Prepare your grill or broiler. Cook until temperature registers 165F on the meat thermometer. Let the chicken breasts rest for 5 minutes before serving, this prevents the meat from drying up.
This was really delicious. We cooked ours on the grill and served it with coconut rice. YUM!
