Day 61 – Single Ingredient Ice Cream

Many of you learned about my love of frozen bananas when I made my frozen banana bites. This pin takes those bites one step further. If you liked those frozen banana bites, get ready to LOVE this! I mentioned in that post how much I loved banana “ice cream”. It’s literally frozen banana mashed into an ice cream-like texture. I didn’t think there was a way to make it at home. Well, there is! The next time you are craving ice cream, make this instead. You won’t be disappointed, and you also won’t feel guilty about how much of it you eat.

Ingredients:

4 bananas, just slightly overripe
2 tbsp creamy peanut butter (or other additional toppings/mix-ins)

Instructions:

1. Peel the bananas and slice them up into 1/4 to 1/2 inch thick disks. Place the banana slices in the freezer for about an hour or until they are frozen solid. Do not freeze the whole banana in one piece. You’ll never be able to blend it!

2. Put the frozen slices in a food processor and pulse. I used a blender and it worked just fine. First they will start to resemble gravel, but keep going. The bananas will soon turn into a frozen mush – at this point, start scraping the sides down (you will do this a lot). You can add a little milk since the liquid will help the blending. I also found it hard to blend all my banana pieces at once so I blended mine in two batches which worked much better.

3. When the bananas look like whipped ice cream, you can add your mix-ins like peanut butter and/or cocoa powder, Nutella, toffee, raspberries, or whatever your little heart desires. Blend until combined and it should look something like this.

Are you drooling yet? Straight out of the food processor, the ice cream is like soft serve. You can also freeze it for a firmer texture. It’s pretty hard when you try to scoop it right after removing it from the freezer. Just give it a minute or two to soften up before scooping.

I made one batch with peanut butter and another with Nutella. They were both amazing! I sprinkled a few chocolate chips on top and my husband and I devoured them. Yum and yum!

  2. I would totally eat this all day! Looks so yummy! (By the way, I did the green onion – placing them in a glass with water, it was fun to watch them grow back!)
