I have been a huge fan of muffins lately. The little man loves them too so they don’t last very long in our house. This recipe combined one of my favorite cakes with my new-found love of muffins.
It’s the inside-out carrot cake muffin. Tell me these don’t look delicious…I dare you!
Yes, that’s cream cheese filling you see oozing out of the top. Instead of putting the frosting on top, it’s baked right in there. For that very reason, they were the best right out of the oven. The muffins were toasty and the cream cheese filling was warm and gooey. Mmmm! My mouth is watering just thinking about it.
I thought these would be way more difficult to make than they really were. It didn’t take much time to make them at all. I think I was intimidated by the fancy sugar granules the original post uses. I wish I had those lying around my house, but it’s probably better that I don’t. They might just end up on everything I bake.
If you are a fan of carrot cake, I think these muffins would definitely be worth your time.
